Okonomiyaki

Adapted from BBC Good Food’s Okonomiyaki recipe.
Ingredients
| 100g | plain flour |
| 0.5 tsp | baking flour |
| 1 egg | beaten |
| 100 ml | dashi |
| 1/4 | cabbage, shredded |
| 1 | spring onion, finely sliced |
| 100g | seafood, protein or more vegetables |
| ginger, grated (thumb sized) | |
| 1 tsp | soy sauce |
| 1 tsp | mirin |
Toppings
| Okonomiyaki sauce | |
| spring onion, sliced | |
| dried bonito flakes |
Instructions
- Make batter (start with dry ingredients, mix in egg, slowly incorporate liquid).
- Add vegetables and proteins and stir in
- Heat pan and add oil. Pour in batter.
- When the base has solidified / browned enough, carefully flip over to cook the other side
- Cover and check doneness (stick in a skewer or chopstick and check that it is dry when it comes out)
- Add toppings and serve
