Magic Mackerel

Adapted from Leon’s Magic Mackerel recipe with fewer ingredients because I don’t have that many random ingredients in my pantry.
Ingredients
| 200g | couscous |
| 1 tsp | ground cumin |
| 2 | lemons, squeezed |
| 0.5 | head of broccoli, cut into florets |
| 4 | fillets of undyed smoked mackerel |
| 75g | dried apricots, chopped |
| 2 tbsp | toasted seeds (I used a handful of Munchy Seeds) |
| 2 tbsp | dill, finely chopped |
| rocket, around 2 handfuls, roughly chopped | |
| extra virgin olive oil | |
| salt and pepper |
Instructions
- Prepare cous cous according to packet instructions, with zest and juice of 1/2 a lemon, olive oil, cumin and mix.
- Blanch brocolli for 3 minutes in salted boiling water then rinse with cool water.
- Break apart mackerel and mix with rest of ingredients and season.
