Fish and Chips

Ingredients

The Fish

Some huge cod / haddock fillets

1 cup flour, seasoned with salt and pepper

The Chips

Potatoes (Maris Piper, King Edwards, Desiree are good chip potatoes)

The Batter

100gflour
7 Tbspmilk
0.5 tspolive oil
pinchsalt
6 Tbspsomething fizzy (I used carbonated water)
ice cubes

Deep frying oil

4L sunflower oil

Instructions

We have a Sage “Smart” deep fryer so it tells us when to load the chips and fish :)

  1. Fire up the deep fryer, and do the chips, first fry. Drain oil.
  2. Cover the fish with the seasoned flour (shake them off before dunking in batter)
  3. Fire up the deep fryer for fish.
  4. Quickly dunk fish into the batter, and carefully lower into the deep fryer. Drain oil in a basket done.
  5. Fry up the chips for a second time.

Wiffle-Waffle bit

We LOVE fish and chips. We’d started having fish and chips weekly this year, frequenting various Fish and Chips establishments around London (our favorite is Toff’s of Muswell Hill).

So after a whole month without fish and chips (no thanks to you, Covid-19!) we decided to dust off our deep fryer for it’s first use.

I looked at various recipes for Fish and Chips (Nigel Slater’s, Rick Stein’s, Jamie Oliver’s, etc) but this is the one I’ve pilfered from as it sounded like the easiest :)
